If your cat will eat about 2 teaspoons of yogurt that contains live active cultures that will help. Give him something like Activia but nothing that has artificial sweetner that is toxic to cats. Groom him frequently to help keep the hairballs down. The hairballs scrape against intestinal walls causing irritation and even bleeding. You may try a hairball food like Purina One advanced hairball control. Your cat may be sensitive to the preservatives in the dry food so you may want to try a high quality canned food. If your cat like, give him some of the gelatin substance left after baking chicken. My cat really likes that and chicken doesn't cause much of an inflammatory response or any allergies at all.

Sorry, I don't have any personal experience with IBD, but there is a Yahoo Group that is devoted to Feline IBD and it seems like it would be an excellent place to start. From my own experience with the Feline Cancer group, the folks in these groups are very knowledgeable, supportive and civil!

For diet/nutrition, I'd suggest the guidance of a holistic vet because they are much more knowledgeable about food and nutrition than most 'conventional' vets. Unfortunately, many 'conventional' vets don't delve much into nutrition and some are merely "Shills for Hill's". Here's a very good link to help you find a reputable, licensed holistic vet in your area.

And here's a search string for "feline", "diet" and "Inflammatory Bowel Disease":
